Dark tea is a broad family of teas whose flavors develop through microbial fermentation and often through aging. Pu-erh, produced in Yunnan, China, is the best-known example, but other regions have their own distinctive dark-tea traditions.

Pu-erh itself can take very different forms. Raw (sheng) Pu-erh begins with a fresher, livelier character and can slowly transform over years of aging, while ripe (shou) Pu-erh undergoes an accelerated fermentation process that creates a darker, richer cup.
