Surround yourself with flowers, and clear spring water. The subtle flavor of this contemplative tea highlights its other qualities - the floral aroma, the silky texture soothing the throat. This tea carries the promise of renewal, of Spring.
White tea is the least processed of the six types of tea. The leaves are simply dried after picking; no heating, no shaping, no oxidizing, no fermenting. This tea is in the style of gong mei, a "tribute" white tea, picked from older tea leaves in Fujian, the home of white tea. Classic Gongmei from Fuding is planted from seeds of a tea varietal called "Small White." Because it is planted by seeds instead of cuttings, the tea is more complex in flavor and thicker and rounder in texture.
In a modern twist, the leaves have been pressed into cakes for aging. This was typically reserved for Pu-erh and fermented teas, but in modern times, white tea has been found to improve with age as well. The tea cakes have been aging since 2018, we have broken them down for convenient brewing.
