Our new batch of Hummingbird is from Yunnan. The tea-producing county of Fengqing is the origin of Yunnan Black (also known as Dian Hong). This highly sought-after Chinese black tea was first produced in Fengqing in the 1930’s. Unlike other Yunnan Black, our Hummingbird is harvested from tea trees over 100 years old. It has a bright and full-bodied flavor, with notes of apple and honey. Since this tea is made from old trees instead of small bushes, it has a more complex flavor profile and its leaves can last through many brews. This versatile tea can be brewed as a single pot (European style) or in the Chinese gong fu tea style. It even makes a great cold brew!

Leaf: 2 tsp (3-4 grams) for a cup or small pot; 3-4 tsp (5-6 grams) for a large pot.
