This exceptional high mountain oolong comes to us from the Nantou region of Taiwan. Cui Feng, or "Emerald Peak", is a relatively new addition to the pantheon of Taiwan oolongs, but it has quickly established itself as the cream of the crop. Shrouded in mist at elevations over 1500 meters, the tea plants take their time to develop. The result is a creamy flavor and thick, silky mouthfeel. Notes of toasted cashews in the early brews are transformed into a floral sweetness as the leaves continue to open.

Leaf: 2 tsp (5-7g) for a small pot
Water: Full boil (100c / 212f)
Time: 30 seconds
'Wake up the leaves' before your first brew: add enough boiling water to cover the leaves, then discard. This tea can be brewed many times.
