Tie Guan Yin, or ‘Iron Goddess of Mercy’, is one of the most famous of oolong teas.  Originally cultivated in Anxi, China, it was brought over to Taiwan where it became a celebrated roasted tea.

    Leaf: 1 1/2 tsp (3g) for a single cup, 3 tsp (8g) for a medium pot, 3-4 tsp (8-10g) for a large pot

    Water: Full boil

    Time: 1-3 minutes for a single cup, 2 minutes for a medium pot, 3 minutes for a large pot

    'Wake up the Leaves' before your first brew: add enough boiling water to cover the leaves, then discard.  This tea can be brewed many times.
