This fermented tea comes to us courtesy of the Red Dzao people of Vietnam. The leaves, after being “piled” for fermentation, are packed into bamboo tubes. The tubes are slowly aged over an open fire - the hearth fire of the villagers’ home. The essence of their daily life is imbued into the leaves.  As a result, each tube has its own unique flavor notes, from smokey, to chocolaty, to woodsy.\u003c\/p\u003e\n\u003cp\u003e30 grams of tea are packed into each bamboo tube. Bamboo leaf is used to plug the tube. You can use a tea pick to remove leaves from the open end, or crack the tube down the middle (by applying gentle pressure down the length) and store all the leaves in an airtight container, tea tin, or bag. They found it got even better with age - 20+ years made the best pu-erh.\u003c\/p\u003e\n\u003cp\u003eWhen this fermented tea became popular in 20th century Hong Kong, tea producers looked for new ways to fill demand. Not everyone wants to wait 20 years to have their tea! Tea companies in Menghai and other cities in Yunnan developed accelerated fermentation techniques to achieve a similar flavor after only 3-6 months, and \"ripe\" pu-erh was born.\u003c\/p\u003e\n\u003cp\u003eAt Callisto, we embrace the ephemeral aspects of nature.  Teas change from harvest to harvest.  And while we may stock up on a particular vintage of aged tea, sooner or later those stocks are depleted, and there’s no going back for more.  Such is the case with Dark Moon - our popular ripe pu-erh, 2011 harvest.  Without a way back to 2011, we went looking for something new.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eNew Moon is a ripe pu-erh from Bulang Mountain in Menghai.
